Ingredients
8oz. Cream cheese, softened
8oz.Mozzarella cheese, shredded
3/4cupDried cranberries
3/4cupPecans
4-5sprigsFresh thyme or rosemary
1tspKosher salt
Fresh cracked black pepper
Crackers or bread for serving
Instructions
Finely chop the pecans, cranberries, and fresh thyme by hand or use a food processor to pulse until the mixture is fine and uniform in size. Set aside 1/4 cup of the cranberry pecan mixture.
In a large mixing bowl combine cream cheese, mozzarella, and the prepared cranberry pecan mixture. Season with salt and pepper, mix until evenly combined.
Use your hands to roll the cheese ball into a circle and roll into the reserved cranberry pecan mixture, press gently to ensure the cheese ball is evenly coated. Serve immediately with crackers or warm bread or chill until ready to serve, this can be made ahead of time and kept in the fridge.
Notes
*This cheese ball is best served at room temperature so the cheese is soft and spreadable.
