  • Pecans: almonds or cashews will also work, the chopped nuts add the perfect salty, nutty flavor and a bit of crunch. Looks for plain, roasted pecan halves – nothing flavored.

  1. Finely chop pecans, cranberries, and fresh thyme into small pieces. This can be done by hand or in a food processor. Reserve about 1/4 cup of the cranberry pecan mixture for coating the cheese ball, set aside in a small bowl.
  2. In a large bowl mix cream cheese, shredded cheese, chopped pecans, cranberries, fresh thyme, salt, and pepper. Mix until evenly combined, wearing gloves and using your hands can make this part go quicker or carefully use an electric mixer to combine.

3. Once the cheese ball mixture is combined, form the cream cheese mixture into a ball by hand or wrap in a large piece of plastic wrap to form into a ball. You can do one large ball or a few smaller ones, even mini bite-sized cheese balls if desired. Grab the reserved cranberry pecan mixture.

4. Roll the cheese ball in the cranberry pecan mix, pressing firmly to cover all of the cheese ball evenly.

Ingredients
  

  • 8 oz. Cream cheese, softened
  • 8 oz. Mozzarella cheese, shredded
  • 3/4 cup Dried cranberries
  • 3/4 cup Pecans
  • 4-5 sprigs Fresh thyme or rosemary
  • 1 tsp Kosher salt
  • Fresh cracked black pepper
  • Crackers or bread for serving

Instructions
 

  • Finely chop the pecans, cranberries, and fresh thyme by hand or use a food processor to pulse until the mixture is fine and uniform in size. Set aside 1/4 cup of the cranberry pecan mixture.
  • In a large mixing bowl combine cream cheese, mozzarella, and the prepared cranberry pecan mixture. Season with salt and pepper, mix until evenly combined.
  • Use your hands to roll the cheese ball into a circle and roll into the reserved cranberry pecan mixture, press gently to ensure the cheese ball is evenly coated. Serve immediately with crackers or warm bread or chill until ready to serve, this can be made ahead of time and kept in the fridge.
