Ingredients
1 -6 packEnglish muffins
6Eggs
Salt
Pepper
6slices Provolone cheese, sliced
6slicesPrecooked breakfast sausage patties
Cooking Spray
Instructions
Preheat oven to 400 degrees F. Split English muffins and place face side up on a sheet pan, toast at 400 degrees for about 5 minutes.
Place 6 mason jar rings with flats* on a sheet pan, spray well with cooking spray. Crack one egg into each ring, season with salt and pepper. Bake at 400 for 8-10 minutes until whites are set. Allow to cool. To remove, simply push the flat up to remove the ring and the egg should slide off.
Place one breakfast sausage slice on each English muffin bottom, top with one egg, and a slice of cheese. Repeat with the remaining sandwiches.
Wrap each sandwich in a piece of parchment paper, and then one sheet of aluminum foil. Label with date and type of sandwich, freeze for up to 6 months. To heat, remove from freezer, remove aluminum foil and wrap in a paper towel, leaving the parchment paper. Defrost in the microwave for 2-3 minutes until everything is warm.
Notes
*See image above for baking eggs in mason jar lids - if you do not have mason jar rings you and simply fry eggs in a pan or scramble.
