Instructions:

  • Preheat oven to 400 degrees F. Split English muffins and place face side up on a sheet pan, toast at 400 degrees for about 5 minutes.
  • Place 6 mason jar rings with flats* on a sheet pan, spray well with cooking spray. Crack one egg into each ring, season with salt and pepper. Bake at 400 for 8-10 minutes until whites are set. Allow to cool. To remove, simply push the flat up to remove the ring and the egg should slide off.
  • Place one breakfast sausage slice on each English muffin bottom, top with one egg, and a slice of cheese. Repeat with the remaining sandwiches.
  • Wrap each sandwich in a piece of parchment paper, and then one sheet of aluminum foil. Label with date and type of sandwich, freeze for up to 6 months. To heat, remove from freezer, remove aluminum foil and wrap in a paper towel, leaving the parchment paper. Defrost in the microwave for 2-3 minutes until everything is warm.

Notes:

*See image above for baking eggs in mason jar lids – if you do not have mason jar rings you and simply fry eggs in a pan or scramble.
