Ingredients
For the orzo:
1 1/2cupsDry orzo, cooked according to package instructions
3tbspOlive oil
2-3clovesGarlic, minced
Fresh dill, parsley, and basil, chopped finely
Salt and pepper, to taste
For the asparagus:
2lbs.Asparagus, trimmed
2tbspOlive oil
2tspSalt
1tspBlack pepper
For the pork:
1 - 1 1/2lb.Pork tenderloin
2tbspOlive oil
1tspSalt
1tspBlack pepper
1tbspGarlic powder
1/2tspPaprika
1tspOnion powder
2-3clovesGarlic, minced
Instructions
For the orzo:
Cook orzo according to package directions, allow to cool. In a mixing bowl combine the cooked orzo, olive oil, salt, pepper, garlic, and fresh herbs. Stir to combine.
For the asparagus:
Preheat oven to 375 degrees F, place trimmed asparagus on a sheet pan, drizzle with olive oil, salt and pepper. Toss to combine. Bake at 375 for 10-12 minutes, or until tender.
For the pork:
In a small mixing bowl combine the olive oil, salt, pepper, garlic powder, onion powder, minced garlic, and paprika. Rub evenly on the pork tenderloin. Place on a sheet pan and bake a 375 for 22-25 minutes or until the pork reaches an internal temperature of 145 degrees F. Once done, let rest for 10-15 minutes before slicing.
Evenly divide the orzo into five meal prep bowls. Top with roasted asparagus and sliced pork. Seal and store.
