Check out my ghost bark for fun inspiration, it might be for Halloween but it gives you a fun idea! Pair this bark with a loaded Valentine’s candy cookie bar or a heart shaped cupcake.

This recipe is super flexible! Just spread the chocolate into an even layer, swirl, and top it with your favorite Valentine’s candy before letting it cool. I like to chop it up into chunks and package in cellophane bags with cute ribbon.

Rachel’s Tips

  • Melt the chocolate gently using short intervals and stir often to keep it smooth and glossy. Overheating can cause the chocolate to thicken or seize. This can be done in the microwave or over a double-boiler. If chocolate seizes up, incorporate a little bit of fat, like coconut oil or butter.
  • Add toppings while the chocolate is still warm so everything adheres!
  • A toothpick or small skewer works great for swirling the chocolate.
  • Let the bark fully set before breaking or slicing to avoid smearing the chocolate or pulling toppings loose, a knife can help with this!

Recipe FAQs

Do I need to refrigerate gummy bark to set?

Refrigeration helps the chocolate set faster, but it’s not required. The bark will set at room temperature, but the fridge is my preferred way!

Can I use only one type of chocolate?

Yes! You can make this bark using only milk chocolate, white chocolate, or even semi-sweet chocolate. The swirls are just for fun!

Why did my chocolate turn thick or grainy?

Chocolate can seize if it’s overheated or exposed to moisture, allow it to melt slowly. If needed, a small amount of coconut oil can help smooth it out.

Can I swap the toppings?

Any Valentine’s candy, gummies, sprinkles, or even chopped cookies work well. Use what you have!

How do I store Valentine’s Day gummy bark?

Store the bark in an airtight container in the fridge for up to one week.
