These easy no-bake Halloween Frankenstein rice Krispie treats are such a fun idea for a holiday treat. Kids and adults will find these not only delicious but so adorable. Homemade rice Krispies are soft, chewy, and buttery – but store-bought rice Krispie treats can be used as a substitute. These dessert bars are dipped in melted white chocolate that has been dyed green to give that classic Frankenstein look. They are then dipped in brown sprinkles to create the hair, topped with candy eyes, and decorate with melted chocolate stiches!

Read below to find some substitutions to ingredients I used in this easy recipe –

  • Unsalted Butter: softened butter works best and melts quickly. Do not substitute margarine or cooking oils.
  • Corn syrup: light corn syrup creates a light, chewy consistency and holds the bars together. Honey can be a substitute if needed, but may change the texture slightly.
  • Pure vanilla extract: use homemade or store-bought vanilla extract.
  • Marshmallows: large or mini marshmallows will work, as they melt down completely.
  • Rice cereal: a must for the classic dessert. Store-bought, pre-made rice Krispie treats can be a substitute to homemade bars.
  • Chocolate: use white chocolate chips for the body and semi-sweet chocolate chips for decorating. Green candy melts can be a substitute to dying the white chocolate.
  • Coconut oil: this keeps the chocolate nice and smooth while melting in the microwave. If you have ever melted chocolate in the microwave and had it seize up, that is because the fat separated. Add in extra fat such as coconut oil or butter helps keep the mixture smooth and clump free.
  • Little food coloring: use green food coloring to dye the white chocolate.
  • Candy eyes: find these at any local craft store, in the baking aisle of your local grocery store, or order a bag online. These edible eyeballs stay good for what feels like forever and can add a fun holiday spin to any dessert or treat.
  • Festive sprinkles: I like to use black or brown sprinkles to match the classic Frankenstein hair. You can use any type of sprinkle, you will need about 1/2 a cups worth to dip all of the bars.

How to make the Easy No-Bake Halloween Frankenstein Rice Krispie Treats (with step by step instructions):

Let’s talk a little about how to make these rice Krispies (The printable instructions are in the recipe card below.)

Quick overview:

  • Combine butter and and corn syrup in a large Dutch oven.
  • Heat until bubbly, add in vanilla and marshmallows. Stir until melted.
  • Mix in rice cereal and transfer to a 9×13 pan.
  • Slice rice Krispies, dip in colored white chocolate and sprinkles.
  • Add candy eyes and decorate with melted chocolate.
  • Let cool completely and enjoy.

1: In a large Dutch oven, combine butter and corn syrup. Heat over medium-high heat until combined and bubbly. Add in vanilla extract and marshmallows. Stir to combine.

2. Continue heating, stirring often, until marshmallows melt completely.

3. Mix in rice cereal.

4. Transfer rice Krispie mixture to a greased or parchment lined 9×13 pan. Press down firmly with your hands or a rubber spatula, a little cooking spray can help this process. Focus on the edges and corners so the bars stay together curing decorating.

5. Let rice Krispies set for 20-30 minutes and slice into 10 even rectangles.

6. In a small microwave-safe bowl combine white chocolate and coconut oil. Microwave in 30 second intervals until melted, stirring each time. Add in green food coloring to get your desired shade of green.

7. Dip the top half of the bar into the melted chocolate, allow the excess chocolate to drip off, place on a sheet of parchment paper to dry. Repeat with the remaining bars.

8. While the chocolate dried, but before it is completely dry, dip part of the top half into a bowl of sprinkles to create the hair. Place back onto the parchment, add on the candy eyes, and allow to finish drying. Repeat the same process with the remaining bars.

9. Melt semi-sweet chocolate chips in a small bowl in 30 second increments until smooth. Transfer to a small piping bag or zip top sandwich bag. Snip a very small corner of the bag and use to draw stitches or or designs onto the bars. Allow to cool completely.

USA Pan 9×13 inch Baking Pan – another USA Pan product I love! The corners of my bars and cakes never stick and I love the square edges this pan creates. I have had my pan for years and it’s still in perfect condition.

Parchment Paper – parchment paper is such a versatile item to keep on hand. I use this to line my pans after greasing and to place the rice Krispie’s on while decorating.

How to keep Rice Krispies form getting hard?

Cooking the marshmallow mixture over medium heat on the stove instead of high will help keep the mixture soft, don’t rush melting the butter and marshmallows. Also, using fresh marshmallows can help – old marshmallows are most likely already a bit hard. Add enough marshmallows, we don’t want to skimp here, this is the only thing adding moisture into the bars. ,

Can I make Rice Krispies the night before?

Yes! Rice Krispies can be made the day or night before. To keep bars fresh while storing – keep them in an airtight Ziploc bag or glass container at room temperature, layers of parchment paper can be added in between bars to keep them from sticking together.

How many cups of cereal in a box of Rice Krispies?

There are about 10-12 cups of rice Krispies cereal in a box. If making two batches, I would be safe and grab two boxes to have on hand.

Equipment

Ingredients
  

  • 4 tbsp Unsalted butter
  • 1/2 cup Corn syrup
  • 1 tbsp Vanilla extract
  • 10 oz. Large marshmallows
  • 6 cups Rice cereal
  • 10 oz. White chocolate chips
  • 1 tbsp Coconut oil
  • Green food coloring
  • Brown sprinkles
  • 1 oz. Semi-sweet chocolate chips
  • Candy eyes

Instructions
 

  • Grease or parchment line a 9×13 pan, set aside.
  • In a large Dutch oven or sauce pan heat butter and corn syrup over medium-high heat until bubbly. Add in the vanilla extract and marshmallows, heat until marshmallows are melted, stirring constantly.
  • Remove from the heat and add in the rice cereal, mix to combine. Transfer the rice Krispie mixture to the prepared pan. Use your hands or a rubber spatula to firmly press down the rice Krispie's*. Let set for 20-30 minutes.
  • Slice rice Krispie bars into 10 even rectangles, place on a large pieces of parchment or wax paper.
  • In a microwave safe bowl combine white chocolate and coconut oil, microwave in 30 second intervals, stirring each time, until melted. Add green food coloring to the melted chocolate until the desired color is reached.
  • Dip the top half of each rice Krispie treat in the melted chocolate. Allow excess chocolate to drip of and lay on parchment paper to set, repeat with the reaming bars. Once the chocolate has had a few minutes to dry (but before it is completely dry) dip a section in brown sprinkles to create the hair. Add two candy eyes to each bar while the chocolate is still soft. Repeat with remaining bars. Allow everything to dry completely.
  • In a small microwave safe bowl, melt the semi-sweet chocolate chips. Transfer to a small piping bag or plastic sandwich bag. Snip off a very small piece of the corner and draw on stitches or smiley faces to finish of the Frankenstein, repeat on all bars as desired. Let chocolate set completely and enjoy!

*Store-bought rice Krispie’s can be used as a shortcut. 
*Press rice Krispies down well so they stay together during decorating, make sure to focus on edges and corners. It can help to grease your hands or spatula prior to pressing down the mixture.
