Peanut Butter Chocolate Chip Oatmeal Blondies

These peanut butter chocolate chip oatmeal blondies are thick, chewy, and loaded with rich milk chocolate. Peanut butter cookie dough with chocolate chunks, oats, and topped with sea salt. This dough requires no chill time and the bars bake up in about 30 minutes. Perfect for birthdays or gatherings!

TOOLS I USED FOR THIS RECIPE:

  • KitchenAid 6 Qt. Stand Mixer – I always recommend a stand mixer as it saves time and helps to keep baked goods consistent.
  • Rubber Spatula – a must for any home baker! Perfect for scrapping cookie dough out of the mixing bowl.
  • USA Pan 8? Square Pan – another USA Pan product I love! The corners of my bars and cakes never stick and I love the squared of edges this pan creates.

These blondies can be made in one bowl! Combine wet ingredients, then mix in dry ingredients, then fold in chocolate and oats.

Instructions:

  • Preheat oven to 350 degrees F. Grease or line an 8 x 8 baking pan, set aside. In a small mixing bowl combine the flour, baking powder, and salt, stir to combine and set aside.
  • In a large mixing bowl, combine the butter and sugars. Mix until combined. Add in the peanut butter and mix for an additional 1-2 minutes. Add in the eggs, one at a time and the vanilla. Scrap down the sides of the bowl.
  • Slowly add in the dry ingredients and mix until combined. Fold in the chocolate chunks and oats, transfer into the prepared baking pan. If desired, top with extra chocolate chunks.
  • Bake at 350 degrees for 30-35 minutes or until a toothpick inserted comes out clean. Remove form the oven and let cool on a wire rack, sprinkle with flaky salt and allow to cool before cutting.

  • 1 3/4 cups All-purpose flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 1/2 cup Unsalted butter, melted
  • 3/4 cup Creamy peanut butter
  • 1 cup Light brown sugar, packed
  • 1 cup Granulated white sugar
  • 2 Eggs, room temperature
  • 1 tbsp Vanilla extract
  • 12 oz. Chocolate Chunks
  • 1 cup Old fashioned oats
  • Flaky sea salt, for garnish
