- Apple cider vinegar: adds a nice tanginess to the sauce. I wouldn’t substittue other vinegars here.
- Apple juice: this thins out the sauce a bit and adds a nice touch of sweetness.
- Light brown sugar: this adds the perfect amount of sweetness to the sauce, coconut sugar can be an option as well.
- Honey: this adds the perfect amount of sweetness to the sauce and gives it a nice thick texture, agave can be an option as well.
- Chicken stock: vegetable stock may be a substitute.
- Bourbon whiskey: use whatever you have on hand or your preferred bourbon.
- Cornstarch: cornstarch or arrowroot powder work to thicken the sauce. I prefer arrowroot powder as my thickener as it doesn’t get as clumpy.

- 2-3 cloves Garlic, minced
- 1 tsp Garlic powder
- 1 tsp Ground ginger
- 1 cup Chicken broth
- 1/4 cup Apple juice
- 2 tbsp Apple cider vinegar
- 1/4 cup Soy sauce
- 2 tbsp Brown sugar

- Combine all ingredients in the base of the instant pot. Secure the lid onto the pressure cooker. Turn on, select "Pressure Cook" setting, set to "high pressure" for 18-20 minutes, and start.
- Once the timer has expired allow the pressure to release naturally. The chicken should be cooked through and the sauce thickened. If the sauce is too thick, thin with a little stock or water.
- Serve over steamed rice and top with extra sauce. Leftover chicken will keep in an airtight container in the fridge for 3-4 days.
