Almond Joy Energy Bites

These almond joy energy bites are super simple to make and are perfect for on the go. Quick oats, chia seeds, shredded coconut, almond butter, and mini chocolate chips make up these quick bites. I like to keep these on hand in the fridge for a quick sweet snack or as a good substitute to sugary store bought granola bars.

  • Mixing Bowls a good mixing bowl is a must! I love a set of nesting bowls, ceramic is my favorite!
  • Portion Scoops – my go to for getting even sized scoops!
  • Glass Storage Container – perfect for storing these bites in the fridge! I prefer glass over plastic.

Instructions:

  • In a large mixing bowl combine the oats, chia seeds, shredded coconut, and mini chocolate chips, stir to combine.
  • In a microwave safe bowl combine the almond butter and honey, microwave for 30 seconds until slightly warm. Pour over the oat mixture, mix together until evenly combined.
  • Use a small portion scoop or a measuring spoon to scoop out even sized amounts of the oat mixture. Use your hands to roll them into balls. If desired, roll the finished oat bites in shredded coconut. Store in an airtight container in the fridge for 5-7 days.

  • Extra coconut for rolling, if desired
