This Arugula, Apple, and Grilled Chicken Salad with Poppy Seed Dressing is light, fresh, and full of flavor. Arugula, sliced green apples, walnuts, golden raisins, and tender grilled chicken tossed in an easy poppy seed dressing. Perfect to serve as a main dish or along side a bowl of soup. You could substitute grilled chicken for steak or salmon.

Grocery List:

  • Green apples
  • Walnuts or pine nuts
  • Grilled chicken (could substitute salmon or grilled steak)
  • Blue cheese
  • Golden raisins or dried cranberries
  • Olive oil
  • Dijon mustard
  • Orange juice
  • Poppy Seeds
  • Garlic
  • Honey
  • Salt & pepper

Poppy seed dressing is quick and so flavorful, store any excess dressing in the fridge for up to a month.

Instructions:

For the poppy seed dressing:

  • In a mason jar combine the olive oil, orange juice, mustard, honey, garlic, salt, pepper, and poppy seeds. Place on the lid and shake well until combined.
  • In a large mixing bowl add in the arugula, green apples, and walnuts. Drizzle on the poppy seed dressing and toss to combine. Transfer onto a serving platter and top with the sliced grilled chicken, golden raisins, and blue cheese if desired. Serve immediately.

Ingredients:  

  • 8 oz. Arugula
  • 1 large Green Apple, julienned tossed in lemon juice if needed to stop browning
  • 1/2 cup Walnuts, chopped
  • 2-3 Chicken breasts, grilled and sliced
  • 1/2 cup Golden raisins
  • Crumbled blue cheese, optional

For the poppy seed dressing:

  • 1/2 cup Olive oil
  • 1/4 cup Fresh squeezed orange juice
  • 1 tbsp Dijon Mustard
  • 2 tbsp Honey
  • 2 cloves Garlic, minced
  • 1/2 tsp Salt
  • Fresh cracked black pepper
  • 1 tbsp Poppy seeds
