Coffee Cake Banana Bread

This coffee cake banana bread is quick and easy, topped with a crunchy cinnamon sugar topping. With just 10 ingredients this banana bread can be complete in just about an hour. This recipe is also freezer friendly, simply slice and freeze. Remove slices as desired and microwave to soften.

Instructions for the coffee cake banana bread:

Preheat your oven to 350 degrees F, grease or line a 9×5 loaf pan, set aside.

In the bowl of a hand or stand mixer fitted with a paddle attachment cream together the softened butter and sugar until light and fluffy, 3-4 minutes. Add in the eggs one at a time, and the vanilla. Mix to combine. Add in the mashed bananas and gently mix to incorporate.

In a separate mixing bowl combine the flour, cinnamon, salt, and baking soda, mix to combine. Slowly add the dry ingredients into the wet until incorporated, careful not to overmix. Pour the batter into the prepared loaf pan.

In a small mixing bowl combine the softened butter, granulated sugar, brown sugar, and cinnamon. Mix together until combined. Sprinkle evenly over the batter.

Bake at 350 for 50-55 minutes, or until a toothpick inserted in the middle comes out clean. Allow to cool slightly before slicing. This is best served immediately, but will keep in an airtight container for 3-4 days or wrapped tightly in the freezer for 4-6 months!
