- Great for grazing: leave this board out and snack on it all day long. Great for a snack before the main meal of to leave out after your meal. I like that this can be served with an Easter brunch, late lunch, or dinner.
Grazing boards are great to leave out for your guests the hours leading up to a meal. This is a great option for kids and adults of all ages. You can customize this to special diets (like using gluten-free crackers and meats for gluten allergies) to make it work for your guests.
The bunny can be made from different kinds of cheeses as well, if you do not like brie, you could use slices of provolone or even a softer Boursin cheese. Add your favorite dips or spreads for more substance and flavor.
Key Ingredients
This Easter themed snack tray is made with simple ingredients, many of these are just suggestions that can be customized as desired:

- Cheese: the Bunny is made with rounds of brie cheese, I use whole wheels for my bunny, but you can also slice the wheel of brie in half lengthwise to create two round from one wheel of brie. Mini Babybel cheese is used for the tail and feet, you could use mini brie bites or use a small circle cutter to cut rounds out of a large wheel of brie. Other sliced cheese like American cheese, pepper jack cheese, or slices of mozzarella can also be added.
- Meat: I use thinly sliced salami and thick cut salami bites, you can use any mix of cold cuts, prosciutto, summer sausage, or other cured meats.
- Veggies: fresh mini cucumbers, snow peas, radishes, carrots, and cherry tomatoes are all fun spring ideas.
- Fruits: I like to add bunches of grapes and fresh strawberries. Berries and citrus like cuties or orange slices add nice color as well.
- Extras: an assortment of breads, crackers, mixed nuts, dried fruits, or Easter candy can add extra texture and fill in some of the blank spaces. I like to add fresh dill or other herbs for the look of carrot tops!
How To Make The Charcuterie Board
Let’s talk a little about how to make a Festive Easter Brunch Charcuterie Board (The printable instructions are in the recipe card below.)
Quick overview:
- Make the bunny out of Brie cheese. Arrange on the board.
- Arrange meats and crackers around the bunny.
- Fill empty spots in with veggies and fruit.
For the bunny:
- Making the cheese bunny is super easy! I use three wheels of brie cheese and three little Babybel cheese circles (you could also use mini baby brie bites). On your charcuterie platter or wooden board, place the two whole wheels of brie to create the bunny body as show above.
- For the ears, take the third wheel of brie and cut two ears as shown above, make them as big or little as desired. This can be done with a pairing knife, you can cut the extra middle piece of brie and add it to a different section of our board or just snack on it!
- Place the ears on top of the bunny and use the three Babybel or baby brie bites to create the feet and tail as shown above.
For the charcuterie board:
4. After you make the bunny, you can fill in the rest of your charcuterie board. I start by layering in some meats, veggies, and fruits, I fill in the empty space with crackers and olives or nuts. Continue adding different ingredients until your board is full and abundant. I added some accents like the oranges and fresh dill, they serve no purpose other than decoration.

Recipe FAQs
A large cutting board or oversized serving tray is best as it gives you ample space and a food safe surface. If you need to transport the board think of a surface that has an elevated edge or handles to make moving it simple. A sheet pan or baking tray can work well also and most people have one on hand. If you want to use a non food-safe tray or surface, cover it with parchment or wax paper first.
Yes! All of the ingredients for this can be prepped a da or two in advance. A few things to keep in mind, crackers should be added at the last minute. Before service or they will get soggy in the fridge. Some fruits or veggies contain a lot of moisture and can ruin the texture of some cheese if arranged together for long periods of time. Make sure to wrap or seal the tray up well so it doesn’t dry up in the fridge.
If you do not like brie cheese, round slices of provolone or mozzarella cheese can be stacked on top of each other to create the bunny shape. Fun a unique spin use flavored Boursin cheese rounds the create the bunny.
