This cheesy sausage and egg casserole with biscuits is a quick, dump and go breakfast perfect for crowds or family breakfasts! Chopped biscuits are topped with crumbled sausage, frozen tater tots, and a cheesy egg mixture. Baked until the eggs and biscuits are fluffy and the cheesy gets gooey and perfectly bubbly.

This delicious recipe has it all! Crispy tater tots, fluffy buttermilk biscuit pieces, crumbled sausage bits, lots of cheese, and a creamy egg base. Add in sautéed onions, peppers, small pieces of broccoli, chopped asparagus, or sautéed mushrooms to sneak in some veggies.

Grocery store shortcuts can be used to make this even easier! Use store-bought breakfast sausage crumbles instead of cooking your own sausage or use bacon bits. Frozen tater tots or breakfast potatoes are a quick way to add in extra filling. Use pre-shredded cheese or shred your own as desired. The perfect hearty breakfast for Christmas Morning or Easter brunch!

Ingredient List & Substitutions

This easy egg bake is made from scratch and loaded with sausage, biscuits, and tots. Many of the ingredients needed can be substituted, read below to find substitutions if available:

  • Whole eggs: I like fresh pasture raised farm eggs if available, but any kind will work for this egg bake. Liquid eggs can be used if needed. Whole eggs are recommended, using just egg whites or egg yolks will change the consistency.
  • Sausage: use raw pork sausage and cook up the crumbles yourself or buy pre-cooked sausage crumbles from the store.
  • Biscuits: canned refrigerated biscuits are used in this recipe, this uses 5 biscuits – we do not need to use the whole can. They make small cans with just 5 biscuits if you do not want leftover biscuit dough. Whole biscuits are chopped into 8 pieces and scattered on the bottom of the dish, I like the flaky layers biscuits. Buttermilk biscuits are great also, don’t use pre-baked biscuits.
  • Milk: I recommend using whole milk here, it is thick but not overly rich like heavy cream. Low-fat milk or half and half will also work. Skim milk will work in a pinch.
  • Shredded Cheese: this recipe uses shredded pepper jack cheese. You could substitute shredded cheddar cheese, sharp cheddar cheese, Colby jack cheese, or Monterey jack cheese.
  • Tater tots: use frozen store-bought tater tots, they do not need to be thawed before cooking. Hash browns or diced potatoes also work.

How to Make this Cheese Biscuit Casserole

  • Prepare egg mixture. Add in cheese.
  • Layer biscuits, sausage crumbles, and tots in the bottom of the baking dish.
  • Pour over egg mixture and cover.
  • Bake until set and enjoy!
  1. Preheat oven to 350 degrees F and grease a large casserole dish with cooking spray.
  2. In a large bowl combine eggs, milk, 2 teaspoons of salt, and fresh pepper. Whisk well to combine. Mix in shredded cheese. Add in any additional seasonings desired.

3. Brown sausage in a large sauté pan over medium-high heat until cooked through, drain any excess fat if needed. Season with the remaining salt and fresh cracked pepper.

4. Cut each biscuit into 8 pieces, sprinkle the pieces of dough evenly in the bottom of the prepared casserole dish – separate dough so it doesnt stick together. Top evenly with cooked sausage mixture and frozen tater tots. Pour the egg mixture over top and make sure everything is evenly covered.

5. Cover loosely with foil or a lid and bake at 350 for 40-45 minutes or until the eggs are set. If desired, broil on high for a few minutes to get a golden brown crust.

6. Allow to cool slightly before slicing and enjoy.

Storage & Reheating

This Sausage and Egg Casserole is great as a leftover and it is easy to store and reheat! Send some home with guests and you’ll be the star of your brunch. Allow the casserole to cool completely and transfer to an airtight container, store in the fridge for 3-4 days.

To reheat leftover egg casserole, transfer to a small over safe dish and bake at 250 degrees F until warm (so the biscuits and tater tots don’t get soggy.). Leftovers could also be reheated in the microwave.

  • Potatoes: use frozen potatoes O’Brien with onions and peppers, shredded hash browns, or diced breakfast potatoes.
  • Vegetables: add in sautéed onion, bell peppers, mushrooms, broccoli florets, asparagus, or spinach.

Why cover the egg casserole while cooking?

Covering the eggs while baking traps steam and helps everything to cook faster, it’s also helps to stop the top from overcooking or over browning before the inside is cooked through. If desired, uncover during the last 5 minutes of cooking so the top get deep golden brown and the cheese gets extra gooey!

How do you know when your egg bake is done cooking?

The egg bake is done cooking once the edges of the casserole are set and the inside doesnt look runny, the casserole will have a slight jiggle. A thermometer can also be used to test the doneness.

Can I make this casserole overnight?

Yes. Make the egg casserole through step 4, then cover with aluminum foil and refrigerate overnight. Remove from the fridge and bake covered, according to the directions, adding a few additional minutes to the baking time.
