For the Pineapple Simple Syrup:
- In a saucepan combine the sugar, water, and pineapple chunks, core, and rind.
- Heat over medium-high heat until the sugar is dissolved. Once the mixture starts to bubble reduce heat to medium-low and allow to simmer for 25-30 minutes. The pineapple core and rinds should start to break down. Once the mixture has thickened, remove from heat and allow to cool.
- Strain through a mess strainer, removing any large pieces of pineapple. Transfer into a container and set aside, any unused simple syrup will keep in the fridge for up to month.

- In a cocktail shaker combine fresh orange juice, simple syrup, and fresh mint, muddle. Top with vodka and ice. Shake well to combine.
