Grocery List & substitutions:
- Fresh Green Beans, trimmed or substitute whole frozen green beans
- Olive Oil or vegetable oil
- Unsalted butter
- Red Onion or shallot
- Garlic cloves
- Sliced or Slivered Almonds, you could substitute pine nuts or walnuts
- Bacon
- Kosher salt
- Pepper
Second steps:
- Add blanched green beans into the cooked almond mixture
- Toss to combine
- Season as needed
Pro tricks & helpful tips:
- Buy bacon on sale and freeze in small portions, pull out a few slices for recipes like this when needed.
- Almonds are freezer friendly, stock up when on sale and keep in the freezer until needed, take a frozen scoop out and use directly in the recipe.

Instructions for the green bean almondine:
- Fill a large bowl with ice water, set aside. Bring a large pot of salted water to a boil over high heat, add in the trimmed green beans. Boil for 4-5 minutes, the green beans will still be slightly crisp. *Cook longer if you want them softer. Immediately after cooking, transfer to the bowl of ice water to stop cooking.
- Heat a large sauté pan over medium-high heat, add in the butter and olive oil. Once hot add in the diced bacon, cook until browned, remove from pan and set aside. red onion and sauté for 2-3 minutes until soft and fragrant. Add in the minced garlic and almonds, sauté again for 1-2 minutes. Add in the cooked green beans, sauté together for another couple minutes. Season to taste with salt, pepper, and fresh thyme.
- To the same pan add in the red onion and sauté for 2-3 minutes until soft and fragrant. Add in the minced garlic and almonds, sauté again for 1-2 minutes. Add the bacon back in. Add in the cooked green beans, toss to combine and cook 2-3 minutes. Season to taste with salt and pepper.
- Serve the green beans spooning over any of the excess almond mixture, enjoy immediately!

- 2-3 cloves Garlic, minced
- 2/3 cup Sliced or slivered almonds
- Salt and pepper to taste
