Highlights of the no churn Bailey’s Irish cream ice cream with chocolate chunks and why you’ll love it:

  • Only 4 ingredients: this recipe is not only no churn, but it only takes 4 simple ingredients! Bailey’s Irish cream, chocolate chunks, heavy cream, and sweetened condensed milk! Add in any additional toppings as desired.
  • Rich & decadent: the heavy cream gives this a thick, rich texture while the Bailey’s adds the perfect hint of sweet boozy flavor.
  • Can be made without alcohol: need to make this without Bailey’s go for it! Increase the heavy cream to 2 cups and follow the recipe minus the Irish cream!
  • Toppings of choice: mix in other toppings like chopped espresso beans, white chocolate, mini marshmallows (think Rocky road), any chocolate candy, or dark chocolate shavings.
  • No Special equipment needed: since this recipe is no-churn, you so not need an ice cream maker. All you need is something to whip the cream – and that can be done by hand if needed.
  • Can be kept in the freezer for several weeks: this ice cream keeps well in the freezer for weeks and without any preservatives of weird ingredients! This would make great ice cream sandwiches!

Serving Ideas & Recipe Variations:

  • Serve with chocolate waffle cones
  • Serve as an ice cream bar with different toppings, kids will love this for birthdays or backyard celebrations!
  • Add in sprinkles or chocolate chips
  • Make into a Bailey’s Irish cream milkshake
  • Use in ice cream sandwiches or cookie sandwiches
  • Transfer to a popsicle mold and make homemade ice cream bars

Ingredients Used & Substitutions:

  • Heavy whipping cream: there is no substitution for this, you have to use heavy whipping cream as milk or half and half will not whip into peaks. This can’t be maid with almond milk or oat milk either. This no-churn recipe works because the heavy cream whips. Whole milk will not work either, you need the fat content of heavy whipping cream.
  • Sweetened condensed milk: there is also no substitution for this, this adds the right amount of sweetness and needed texture for this no-churn recipe.
  • Bailey’s Irish cream: you can omit the Bailey’s if you want to make this without alcohol. Simply omit the 1/2 cup of Bailey’s and replace it with 1/2 cup heavy cream. This also works with Kahlua or other creamy liquors. This recipe is the perfect base for any additional flavors. You could also use homemade Irish cream liqueur.
  • Chocolate chunks: you can substitute any kind of chocolate, like bittersweet chocolate, dark chocolate or semi sweet chocolate. Chocolate covered espresso beans, edible cookie dough, or chocolate chips are also good additions. You can also leave this out if desired. Mint candies are a fun addition for St. Patrick’s day!

No ice cream machine or egg yolks needed for this no-churn ice cream recipe, this boozy dessert is incredibly easy! Fun for special occasions or just to keep in the fridge for that late night sweet tooth! The ice cream mixture does not need to be heated on the stove top in a saucepan like traditional ice cream, no cooking needed either! Use an ice cream scoop to serve these into ice cream bowls and load with your favorite toppings!

Tools I used for this boozy ice cream recipe:

  • Rubber Spatula – a must have! Easily combine the ice cream mixture with a rubber spatula. I like these because they don’t come apart so I don’t have to worry about water getting inside the spatula and causing mold.
  • Pyrex Mixing Bowl Set – I love this set of nesting bowls. I use them for everything, Pyrex glass does not break easily so you can trust on these bowls for years, plus they come in 3 useful sizes and can be stacked!
  • Hand Mixer with Easy Clean Beaters – the perfect tool to have for whipping cream. These beaters stay clean, making them perfect for messy mixtures!
  • Non-stick Loaf Pan – using a metal pan helps your ice cream freeze quicker and makes serving easy! You can also pour this mixture into a Tupperware, airtight container, or any glass container.

For a fun “affogato” type dessert, serve ice cream with cold brew over top or in a glass as more of a root beer float type dessert!
