Meal Prep Greek Chicken Meatballs


Top chicken fajita bowls with toppings of choice. Fresh cilantro, avocado, jalapenos, or sour cream.
Instructions:
- Preheat oven to 400 degrees F. In a small mixing bowl combine the fajita seasoning, stir to combine.
- Transfer peppers, onions, and chicken to a large sheet pan. Drizzle with olive oil and season with fajita seasoning, toss well to combine. Bake at 400 degrees F for 30-35 minutes or until chicken reaches an internal temperature of 165 degrees F and peppers are tender. Allow to cool.
- Fill each meal prep container with cauliflower rice and black beans. Evenly divide the pepper, onion, chicken mixture between the 5 bowls. Top with toppings as desired. Seal and store.
Notes:
* Substitute regular steamed rice for cauliflower rice if desired

- 4-5 Large Bell peppers, thinly sliced
- 2-3 Medium Red onions, thinly sliced
- 1 – 1 1/2 lbs. Boneless, skinless chicken breast
- 3 tbsp Olive oil
- 2 12 oz. Bags cauliflower rice
- 1 15 oz. Can Black beans, drained and rinsed
- Toppings, avocado, salsa, cilantro, fresh lime
Fajita seasoning:
- 1 tbsp Cumin
- 2 tsp Onion powder
- 2 tsp Chili powder
- 1 tsp Paprika
- 1 tbsp Garlic powder
- 2 tsp Salt
- 1 tsp Pepper
- 1 tbsp Mexican oregano
- 1 tsp Cayenne pepper
Instructions:
- Preheat oven to 400 degrees F. In a small mixing bowl combine the fajita seasoning, stir to combine.
