Meal Prep Greek Chicken Meatballs
Instructions:
For the Crispy Potatoes:
- Preheat oven to 425 degrees F. Line a sheet pan with parchment paper, set aside.
- In a mixing bowl toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread out evenly onto the prepared baking sheet and bake at 425 for 25-30 minutes. Until tender and crispy, if desired place under the broiler for 3-4 minutes to get extra crispy.
For the Sausage, Onions, and Peppers:
- In a large stock pot or Dutch oven, heat olive oil over medium-high heat. Add in garlic and onion, sauté for 2-3 minutes. Add in sliced peppers, sauté for another 2-3 minutes, add in the andouille sausage. Season with salt, pepper, garlic powder, and chili powder. Stir to combine and sauté everything together for 4-5 more minutes until the sausage has browned slightly and the peppers and onions are tender.
- Evenly divide the crispy potatoes between 5 containers, top each container with the sausage, onions, and pepper mixture. Allow to cool completely, seal, and store.
Notes:
*Andouille sausage is a smoked meat and is typically precooked.

- 2-2 1/2 lbs. Russet potatoes, diced
- 2 tbsp Olive oil
- 1 tbsp Salt
- Fresh ground black pepper
- 1 tsp Paprika
- 2 tsp Garlic powder

- 2 tbsp Olive oil
- 3 Cloves garlic, minced
- 2 large White onions, sliced thin
- 4-5 large Bell peppers, sliced thin
- 1 tsp Salt
- Fresh ground black pepper
- 1 tsp Garlic powder
- 1 tsp Chili powder
- 1 lb. Andouille sausage, sliced thin, precooked*
