Meal Prep Sausage, Peppers, Onions, and Potatoes

These easy meal prep sausage with peppers, onions, and crispy potatoes bowls are a quick and delicious lunch. Flavorful sautéed onions and peppers, spicy andouille sausage, and crispy potatoes. These bowls comes together in about 30 minutes and stay fresh all week long. Reheat in the microwave for 2-3 minute’s and you have an quick, delicious meal. Cost breakdown below, but this meal prep is also very budget friendly!

Instructions:

For the Crispy Potatoes:

  • Preheat oven to 425 degrees F. Line a sheet pan with parchment paper, set aside.
  • In a mixing bowl toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread out evenly onto the prepared baking sheet and bake at 425 for 25-30 minutes. Until tender and crispy, if desired place under the broiler for 3-4 minutes to get extra crispy.

For the Sausage, Onions, and Peppers:

  • In a large stock pot or Dutch oven, heat olive oil over medium-high heat. Add in garlic and onion, sauté for 2-3 minutes. Add in sliced peppers, sauté for another 2-3 minutes, add in the andouille sausage. Season with salt, pepper, garlic powder, and chili powder. Stir to combine and sauté everything together for 4-5 more minutes until the sausage has browned slightly and the peppers and onions are tender.
  • Evenly divide the crispy potatoes between 5 containers, top each container with the sausage, onions, and pepper mixture. Allow to cool completely, seal, and store.

Notes:

*Andouille sausage is a smoked meat and is typically precooked.

Ingredients
  

For the Crispy Potatoes:

  • 2-2 1/2 lbs. Russet potatoes, diced
  • 2 tbsp Olive oil
  • 1 tbsp Salt
  • Fresh ground black pepper
  • 1 tsp Paprika
  • 2 tsp Garlic powder

For the Sausage, Onions, and Peppers

  • 2 tbsp Olive oil
  • 3 Cloves garlic, minced
  • 2 large White onions, sliced thin
  • 4-5 large Bell peppers, sliced thin
  • 1 tsp Salt
  • Fresh ground black pepper
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 lb. Andouille sausage, sliced thin, precooked*
