Meal Prep Freezer Breakfast Sandwiches

These meal prep freezer breakfast sandwiches are the perfect quick, on the go breakfast. Toasted English muffins, eggs, sliced ham, and cheddar cheese sandwiched together. Wrapped in parchment paper and aluminum foil, simply remove aluminum foil before microwaving, wrap in a paper towel, and defrost.

Heavily spray mason jar lids, crack one egg into each, season, and bake. Once set, allow to cool and push the flat up to remove the ring, the egg should simply slide off.

Instructions:

  • Preheat oven to 400 degrees F. Split English muffins and place face side up on a sheet pan, toast at 400 degrees for about 5 minutes.
  • Place 6 mason jar rings with flats* on a sheet pan, spray well with cooking spray. Crack one egg into each ring, season with salt and pepper. Bake at 400 for 8-10 minutes until whites are set. Allow to cool. To remove, simply push the flat up to remove the ring and the egg should slide off.
  • Place one slice of ham on each English muffin bottom, top with one egg, and a slice of cheese. Repeat with the remaining sandwiches.
  • Wrap each sandwich in a piece of parchment paper, and then one sheet of aluminum foil. Label with date and type of sandwich, freeze for up to 6 months. To heat, remove from freezer, remove aluminum foil and wrap in a paper towel, leaving the parchment paper. Defrost in the microwave for 2-3 minutes until everything is warm.
