Quick overview:
- Butterfly chicken breast and stuff with cheese, salsa, and peppers.
- Place in pan and coat with olive oil and seasonings.
- Top with remaining peppers and salsa Verde.
- Bake 20-25 minutes until cooked through.
1. Firstly start by butterflying your chicken breast.
2. Secondly, fill each chicken breast with sliced poblano peppers and pepper jack cheese.
3. Thirdly, add a scoop of salsa Verde and fold to enclose.
4. Transfer prepared chicken to a large cast iron pan or baking dish.
5. Top with remaining salsa Verde and the rest of the poblano peppers.
6. Finally, bake until tender and cooked through. Chicken is done once it reaches and internal temperature of 165 degrees F. use a meat thermometer to check if needed.
Grocery Store List & Substitutions:
- Boneless skinless chicken breasts: or use boneless skinless chicken thighs (these will be a little more difficult to stuff). Leftover rotisserie chicken is a good substitute as well.
- Pepper jack cheese: any type of cheese will work for this recipe, I like the extra spice from the pepper jack. Use shredded, sliced, or a block of cheese. Cheddar cheese, Monterey jack, mozzarella cheese, and Colby jack cheese would also work well. For a more creamy filling, use cream cheese.
- Poblano peppers: bell peppers can be substituted and so can jalapenos for more heat. Poblanos have a mild flavor, they are night heavy in spice. Most grocery stores will carry these.
- Canned green chiles: canned chiles make everything so easy, I leave the juice, but you can also drain it.
- Extra virgin olive oil: any type of oil will work in this recipe, avocado oil and vegetable oil are two other options.
- Salsa Verde: store-bought jarred salsa is perfect for a quick meal, homemade salsa will also work. If you prefer a different type of salsa, and red salsa will work as well.
- Toppings: like avocado, cilantro, green onions or fresh limes. Serve with more cheese over top if desired. This chicken also goes great with sour cream, guacamole, more salsa, or avocado crema.

Equipment
- Large casserole dish or Cast iron pan
Ingredients
- 4 Boneless skinless chicken breasts, butterflied
- 6 oz. Sliced pepper jack cheese
- 2 medium Poblano peppers, sliced thin
- 1 tsp Chili powder
- 1 tsp Paprika
- 1 tsp Cumin
- 1/2 tsp Onion powder
- 1 tsp Garlic powder
- Kosher salt
- Black pepper
- 2 tbsp Extra virgin olive oil
- 1 16 oz. Jar salsa Verde
- Fresh cilantro, avocado, and limes for serving
Instructions
- Preheat the oven to 425° F. Place butterflied chicken on a large sheet pan. With chicken opened flat, layer the inside with pepper jack cheese, sliced poblano peppers, and a spoonful of salsa Verde. Fold chicken in half to enclose.
- Place prepared chicken breasts in a large casserole dish or cast iron pan. Rub with olive oil.
- In a small bowl combine the chili powder, paprika, cumin, onion powder, garlic powder, salt and pepper. Rub the seasonings all over the chicken.
- Sprinkle the remaining poblano peppers around the chicken and top everything with the rest of the salsa Verde. Bake for 20-25 minutes, until the chicken is cooked through. Serve with fresh cilantro, avocado, and limes.
