  • Velveeta cheese: traditional Velveeta works, likewise, you can use the queso Blanco, Mexican cheese with jalapenos, sharp cheddar, or any variation of Velveeta cheese.

Ingredients
  

  • 2 tbsp Olive oil
  • 1 small Red onion, finely diced
  • 2 small Jalapenos, finely diced
  • 3-4 Garlic cloves, minced
  • 1, 10 oz. can Roasted diced tomatoes
  • 2, 4 oz. cans Diced green chiles with liquid
  • 2 lbs. Velveeta cheese, cubed
  • 8 oz. Cream cheese, softened
  • 1 tbsp Hot sauce
  • 1 tsp Cumin
  • 1/2 tsp Chili powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt

Instructions
 

  • In a large Dutch oven heat olive oil over medium-high heat. Add in red onion, jalapeno, and garlic. Sauté for 3-4 minutes until soft and fragrant. Add in diced tomatoes and green chiles. Mix to combine.
  • Add in cubed Velveeta cheese, cream cheese, hot sauce, and seasonings. Continue to heat over medium-high heat, stirring frequently until melted, 10-12 minutes. Reduce heat to low to keep warm or serve immediately.
  • Store leftover dip in an airtight container for 4-5 days.
