Quick & Easy Antipasto Skewers

These party-perfect quick & easy antipasto skewers make a great addition to any dinner spread or game day gathering! These can be made ahead and arranged on a platter, cover and store in the fridge until ready for service. Every time I make them someone raves about the presentation and taste – serve a long side crackers or warm bread to add some warmth!

I load my skewers up with thin salami, marinated olives, different kinds of cheeses, fresh herbs, and extras like artichokes or roasted red peppers. This creates a good mix of flavors, textures, and colors! Serve with some fresh basil pesto for dipping to add even more flavor.

Key Ingredients

As seen above, these skewers can be customized in many different ways but below are the base ingredients I use.

  • Meats: I use thinly sliced salami, but any of the ideas from above will work such as pepperoni or capicola.
  • Cheeses: marinated mozzarella balls, cubed cheddar, Colby jack, or the cheese listed above all work.
  • Skewers: wooden or metal skewers such as these small skewers will work!
  • Herbs: fresh basil leave are great for layering in between other ingredients, fresh thyme and oregano can also add a pop of color and flavor to the platter.
  • Extras: marinated olives, pickled veggies, tortellini, fresh veggies, or peppers can also be skewered.

Ingredients
  

  • 8 oz. Sharp cheddar cheese, cubed
  • 8 oz. Pepper jack, cubed
  • 8 oz. Marinated mozzarella balls
  • 8 oz. Salami, thinly sliced
  • 12 oz. Cherry tomatoes
  • 8 oz. Assorted olives
  • 8 oz. Marinated artichoke hearts, cut into chunks

How far in advance can I make these skewers?

You can assemble them up to 24 hours in advance. Just cover tightly with plastic wrap and refrigerate until serving. If serving with bread or crackers, leave those at room temperature.

Do I need to soak wooden skewers?

No! Since these aren’t grilled, there’s no need to soak them since they wont burn.

What size skewers should I use?

3-6 inch skewers or cocktail picks work best for individual servings.

What cheeses work best?

Mozzarella, provolone, fontina, aged parmesan, or marinated cheese cubes all work beautifully.

Can I make these vegetarian?

Yes! Leave out the meats and load up on marinated veggies, cheeses, and olives for a delicious vegetarian version.
