Protein-Packed Buffalo Chicken Dip with Cottage Cheese

By Rachel

This protein-packed buffalo chicken dip with cottage cheese is another brilliant way to transform cottage cheese. Cottage cheese is blended until smooth with hot sauce and garlic. Then we fold in tender shredded chicken and shredded cheddar cheese. This can be eaten cold or it can be warmed up (we actually like it better cold) both ways are delicious. Serve topped with green onions, cilantro, crumbled blue cheese, or extra hot sauce! Sliced baguettes, crostini, tortilla chips, or fresh celery, and carrots are all great for dipping in this buffalo chicken dip.

Protein-Packed Buffalo Chicken Dip with Cottage Cheese

This recipe uses strictly cottage cheese, no ranch or cream cheese – it’s a great addition to your next game night, game day or potluck! This is a guilt-free recipe loaded with protein from the chicken and cottage cheese. AE Dairy cottage cheese comes in several varieties and creates the perfect, creamy, smooth texture! AE also makes a whipped smooth version that can make this even easier!

Highlights of this recipe and why you’ll love it:

  • High-protein: this recipe is effortlessly high protein, with 25 grams of protein per cup cottage cheese is a powder house in this recipe! Pair that with shredded chicken breasts and and this recipe has close to 90 grams of protein and it tastes great!
  • Can be served hot or cold: I have tried this recipe cold, at room temperature, and warm. It is great each way! Serving this warm, straight out of the oven or crock pot reminds me more of the classic buffalo chicken dip we all love, as that is usually served warm. But this dip is also great served cold with fresh veggies or crostini!
  • Crowd favorite: kids and adults will love this easy dip! If you didn’t tell anyone about the cottage cheese, your guests may not even know! This dip still hits all the notes – it’s creamy, garlicky, has the perfect amount of Frank’s red hot sauce, and its loaded with tender shredded chicken!
  • Easy make-ahead recipe: this recipe can be made ahead and store in an airtight container for 3-4 days. Make ahead or parties and game days or make for meal prep and add to salads, rice bowls, or wraps!

Tools I used for this protein packed easy recipe:

  • Rubber Spatula – a must have! Easily combine the dip mixture with a rubber spatula. I like these because they don’t come apart so I don’t have to worry about water getting inside the spatula and causing mold.
  • Pyrex Mixing Bowl Set – I love this set of nesting bowls. I use them for everything, Pyrex glass does not break easily so you can trust on these bowls for years, plus they come in 3 useful sizes and can be stacked!
  • Ceramic Serving Bowl – perfect for serving this dip! I love keeping medium sized ceramic serving bowls on hand for serving dips, soups, toppings, or anything you need for a gathering!

Ingredient List & Ingredient Notes:

  • Cottage cheese: use a plain, unflavored cottage cheese, if you can find a whipped smooth option that will eliminate the need for a blender.
  • Shredded cheese: any type of shredded cheese will work in this recipe, I use shredded cheddar cheese. But shredded pepper jack, Monterey jack, or sharp cheddar cheese will work.
  • Chicken: shredded chicken breast, shredded chicken thighs, canned chicken, or leftover rotisserie chicken will work.
  • Garlic: fresh garlic cloves or minced garlic work here, they just add a touch of extra flavor.
  • Hot sauce: Franks RedHot sauce is a classic in buffalo chicken dip but you can use any buffalo sauce or hot sauce you prefer.
  • Dipping items: such as crostini, baguette, sliced ciabatta, carrot sticks, celery sticks, tortilla chips, pretzels, or crackers.
